Sweet Potato Latte

 

What is a Sweet Potato Latte?

The Korean Sweet Potato Latte, also known as the Gogum Latte, is traditionally made with steamed sweet potato. It’s a popular fall and winter drink in the region and has been slowly growing in popularity around the world in the last few years. Another popular variation of this is the Ube Latte, which is a purple sweet potato.

It’s a very filling and delicious breakfast that you can easily take on the go with you. The nutrients packed in from the sweet potato contain Vitamins B, C, and D, calcium, iron, magnesium, phosphorus, potassium, and more! It also contains several antioxidants, including Beta Carotene and Anthocyanins. So besides being tasty, it’s also pretty healthy (depending on how much sugar you add in, of course).

This is also one of the most hangover-friendly meals I’ve ever had, in case anyone happens to be in the market for something like that.

Sweet Potato Latte

Servings: 1

Ingredients:

  • 1 Sweet Potato

  • 2 Cups Oatmilk

  • 1 Tbsp Maple Syrup

  • 1 Espresso Shot OR 1 Typical Portion of Coffee
  • Pinch of Salt
  • Optional: Pistachio Simple Syrup (recipe)

Special Equipment: Blender

Instructions- Microwave:

  1. Poke some holesinto your sweet potato skin for pressure release, otherwise it will burst. Put in the microwave for 5 minutes, or until a fork can easily go through when poked. Remove and discard the skin.


  2. Put your oat milk, maple syrup, salt, and sweet potato into your blender. Blend until smooth. Pour smooth mixture and espresso shot into a saucepan and bring back up to a hot temperature, but be careful not to boil. Stir to combine.


  3. Enjoy and serve hot in a heat proof glass (like a Mason Jar)!


Instructions-Oven:

  1. Preheat oven to 400°F/205°C.


  2. Poke some holesinto your sweet potato skin for pressure release, otherwise th skin will just tear and get messy in the oven. Put in the oven for 40-50 minutes, or until a fork can easily go through when poked. Remove and discard the skin.


  3. Put your oat milk, maple syrup, salt, and sweet potato into your blender. Blend until smooth. Pour smooth mixture and espresso shot into a saucepan and bring back up to a hot temperature, but be careful not to boil. Stir to combine.


  4. Enjoy and serve hot in a heat proof glass (like a Mason Jar)!


Serving Suggestion:

  • Whipped Cream (or vegan whip) + Chopped pistachios or Ground Cinnamon on a cold day
